Summer Pasta Salad

Amount Measure Ingredient
1 bunch parsley
1/2 -- roasted red pepper
12 ounces bowtie pasta
diced -- pepper cheese
1/2 -- yellow bell pepper
6 ounces feta cheese
several whole black olives
-- to taste salt
-- to taste pepper
1/2 chopped purple/Bermuda onion


  • Cook pasta "al dente" with olive oil and salt
  • Mix all ingredients in a bowl.
  • Toss together and add salt and olive oil to taste. Chef Jim loves lots of black pepper!
  • Serve on top of mixed greens and garnish with roma tomaties and black olives.
  • Enjoy!
